Tonight I made my favorite chili. Its one of my go-to meals that I love to prepare in the morning and then enjoy later on at night. It only calls for a few ingredients, most of which I have in my pantry already. I really love creating meals out of what I already have. It’s fun and challenging, but also cuts back on going to the grocery store a few times a week and it helps you use up what you already have! Less waste people!
I love one-pot meals. They are so easy to just toss everything in a single pot and go. All it takes is a few minutes of prep time and you are good to go. I combined: 1 onion, 1 green pepper, red kidney beans, chick peas, corn and petite diced tomatoes in my crock pot.
I also added a beer from the fridge. I always think a beer gives the chili a little extra something something.
I have made this chili with and without meat. Its good either way. Boyf likes the extra protein and we had some meat in the fridge, so I threw some in there. I also added chili mix and seasoning.
The crock pot was all fired up and ready to go! I had it on high while I was home and then left it on low while I went to work. Came home to the apartment smelling of sweet and glorious chili! Yum!
I busted out one of my pretty new bowls, put some rice on the bottom, added some chili to that and topped it off with some shredded cheese and sour cream. Tortilla chips were also involved. They are sort of my weakness when it comes to chili.
Is it me or does this look like a glorious summer sunshine?
Yum Yum! I may or may not have concluded this meal with a Peanut Butter Cup that I made yesterday.
