I was inspired this morning for breakfast from Monica. I saw her lovely breakfast this morning during my am blog surfing session, and I was sold. It’s pretty much a breakfast/lunch combo of deliciousnessI took out two Kashi Honey Oat waffles, added P.B. Loco and jelly and topped it off with some banana. I did all this before I put it in the toaster over. If I were to do it all over again, I would have toasted the waffled first, and then add the gooeyness, it was a little messy, but well worth it. I also think I added too much jelly! It was good though. I may or may not have licked my plate clean.
I enjoyed my morning makeshift breakfast sandwich with a cup of Mighty Leaf Marrakesh Mint Green Tea. It was lovely.
Do you have a favorite type of tea? I love trying all sorts of new flavors. Tea is one of my favorite things!
In other news I am totally drained. I am so tired, and worn out, I need a day (or a week) to just sit back, relax, sleep, and catch up on my to do list that is already a mile long and it just keeps on growing! It’s just one of those weeks (or months?) where I just don’t feel like there ever are enough hours in the day!
I do have off tomorrow (thank the lord!) and boyf, Jackson and I are heading down to my parents beach house in Bethany Beach, Delaware this weekend. I think my parents are more excited to see Jackson than me, just kidding, not really. I am very excited to unwind, hang out with the fam, maybe get some color on my face, read a little and just relax. Is it Friday afternoon yet?! I am totally counting down!
Don’t forget about my Flax Matters Giveaway!

Oh, that sandwich looks delicious! I have to try it for breakfast tomorrow.
Yum, I love that wafflewich! I hope you can find some time to unwind and relax, girl 🙂
This is random, but 1. I was a Tri-Delt (at PITT, I graduated in '06) and 2. I used to live in Manayunk! Too funny! 🙂
p.s. Happy Belated Birthday, Jackson!
