Mugshots with RhodeyGirl Round 2

Today was a fabulous day! I woke up early and went to my Biology lab. We are still only in the second week of classes so things are still pretty basic. I then had the rest of the day off, which is always exciting!  I had plans to meet RhodeyGirl for lunch again, and since my class got out early, I headed over there as soon as I was finished. We decided to meet at Mugshots again since it’s close to where RhodeyGirl lives and close to where my classes are.  Everybody wins!

I got there early and decided to enjoy my first Pumpkin Spiced Latte of the season. It was absolutely divine.

It was the perfect temperature and flavor. I loved every drop. I enjoyed my latte while reading The Time Traveler’s Wife. Perfect combination!

When RhodeyGirl got there we were both pretty hungry. I had been messaging her about this Pumpkin Soup that Mugshots had on the menu, and then when we got up there to order, they were all out of it! It was quite sad, we will have to go back and get it next time! Here is our table of food:

Since they were out of the Pumpkin soup, we decided to split the Vegetarian Chili. It was pretty good, but I was so excited about the Pumpkin soup,  and sad when they didn’t have any more, that the chili didn’t live up to its expectations. It did have a good taste though

For my main course I had what RhodeyGirl had last time, the grilled veggies, provolone and pesto on ciabatta bread. It was delicious!

This time, we remembered to get a picture together! I think we are going to make this Wednesday meet-up a weekly event!

Post lunch we decided to head down to Whole Foods to have some more fun! It was nice to walk down the aisle and have a friend to talk to about all the products we read about all over the blog world on a daily basis!

I didn’t end up getting much at Whole Foods since I went shopping early this week, but I did pick up these little numbers. RhodeyGirl introduced me to the wonders that are the Philly Pretzel Rolls! They look so yummy, and smell even better!

Soon after it started to rain and RhodeyGirl helped me put my bike in her car (since I biked to class this morning) and she drove me home. It was super nice of her, so thanks for the ride RG! Sadly I forgot my helmet in her car, so I will be seeing her again this week!

Jackson was waiting for me when I got home wondering why I took longer than usual. Who could resist that face?!

Chocolate-PB-Coconut-Sugar Cookies

Subtitle for this post: “What I Made While Watching The Biggest Loser”

I know Angela was saying how this show makes her do pushups while watching. Is it bad it makes me bake and want to eat sweets?? Either way, that’s the reality of the situation. I was baking up a storm last night! It started with a hankering for cake after dinner. I went through the pantry and alas there was no cake mix to be found, but I did find this little gem: Betty Crocker’s PB Cookie Mix.

I made the mix, threw in some chocolate chips, coconut and some M&M’s for good measure. I wasn’t messing around with these cookies!

DSC_0096I put everything in the oven to bake and then I was even further inspired!

I saw this recipe floating around the blog world a while ago and remembered it when the cookies were in the oven, and I started throwing some more ingredients together. I decided to make the coating for the cookies!

Coating: 1 cup semisweet chocolate chips (6 oz), 1/4 cup butter or margarine, 1/4 cup peanut butter and 1 teaspoon vanilla

I mixed all the above ingredients in a bowl, and put it in the microwave for 30 second spurts until everything was all melted. For the vanilla I used Singing Dog, and for the Peanut Butter I used Crazy Richards. That PB is amazing, but more on that later.

After the cookies came out of the oven, I let them cool for a while.

Then it was time to add the coating. I used a spatula to spread it out evenly on each cookie. YUM!

THEN I threw the cookies in a bag with powdered sugar. Love the recipe Chandra! This gave the cookies another layer of goodness! It was a little bit messy, and a lot yummy!

These cookies are amazing. They are a fabulous treat. There were some things I substituted for a little healthier aspect to the recipe (e.g. the butter) and other’s I didn’t (e.g. the chocolate!), but they turned out so very tasty! There are always little tweaks you can make to recipes to save some calories.

I haven’t had powdered sugar since I was a kid. It was a great addition to the cookie.

Seriously, it doesn’t get any better than that! DSC_0110  Any other Biggest Loser fans out there? What did you think of the season opener tonight? I thought it was fabulous! I honestly didn’t even know it was tonight until I heard a commercial on the radio this morning. I didn’t feel they promoted it too much this year! I do love that Jillian and Bob are both training everyone. Should make things interesting. I am going to look forward to Tuesday nights from now on! So pumped its back on!

Mile High Taco Bake

Tonight was Mexican night! Ole! I decided to have a nice taco bake waiting for boyf when he came home from work. He loves coming home to a nice dinner on the table, but seriously, what guy doesn’t?

I added some ground turkey, 1 can of kidney beans and a taco mix into the pan. Let everything simmer and come to a little boil.

Once the taco mixture is ready to go, it’s time to have some fun! I busted out the Don Sabrosa salsa and it was time to make some layers. I put a tortilla on the bottom of a pan, spread some salsa, added some cheese and the taco mix.

Repeat above layering steps a few times! Put in the oven at 400 degrees for 17-22 minutes/until cheese on top is melted

I also made a massive salad to get some greens into our dinner.

On my salad I had some Brianna’s New American dressing. I was sent a few bottles of Brianna’s to try and this is my first experience. Jackson was looking on trying to catch a glimpse of our lovely meal.

Check out my plate. I figured I made about 6 servings of the taco bake, so I wanted to be conscious of the portion size.

The Brianna’s dressing was really good. It was a creamy balsamic vinegar. I love that the dressing is made with all natural ingredients. From Brianna’s website: “We sought out the best natural ingredients, like honey, balsamic vinegar, garlic, grape juice, spices, and more, then combined them to form a united nation of natural goodness.” I liked it a lot and so did boyf. I could see it going with so many things!

Boyf and I rarely get to sit down to nice meals like this so it was a treat. We turned off the TV, turned on some music and talked about our days. It was a lovely meal. I had some white wine with dinner and boyf had a martini. Cheers!

Check out the awesome layers in this taco bake! One reason I love making home cooked meals is leftovers. I have already packed up a little doggie bag for boyf to take in for his lunch at work tomorrow!
