Easy Peasy

Dinner tonight was simple and delicious! I started off with a Pretzel Roll that I got yesterday with RhodeyGirl. I love the star shape in the rolls! Boyf LOVED these. I will definitely be buying more!

I paired my Pretzel Roll with 2 ears of corn. I LOVE me some corn! DSC_0120

I also whipped up a little side salad with some cucumber, peppers, carrots and onions! Yum! DSC_0118

I used Brianna’s Champagne Caper Vinaigrette and LOVED IT! It is so creamy and delicious with a little sweet tang to it! It may be moving up in rank to favorite dressing! DSC_0119  DSC_0121

I love corn in the summer and am sad that summer/corn season is ending. I feel like I didn’t eat enough of it this year!

For dessert I had my fabulous Chocolate-Peanut Butter-Coconut-Sugar Cookies that I made the other night.

It was my turn to pick the Netflix and tonight we are watching Coraline! I wish we got to see it in 3-D in theaters, but I am excited to watch it. I heard great things about it! Anyone seen it?

A Sprout Sandwich

Thursday is my busy crazy day! I have lucked out the past two weeks since its the start of the semester and we haven’t spent too much time in the lab so I have been getting out early, which I LOVE! It’s nice to have some unexpected free time pop up in the day! That free time means I get to come home and blog, catch up on my Google reader, and make lunch!

Today for lunch I had a sprout sandwich! I toasted some bread and melted some of my favorite pepper jack cheese, shredded some carrot and added some broccoli sprouts, banana peppers and some mustard to top it all off.

I paired my lovely sandwich with some Lesser Evil Veggie Krinkle Sticks. These things are amazing. They have a great taste and a fabulous crunch, and they are pretty light and airy! Yum!

Why are Veggie Krinkle Sticks the "Lesser Evil"?
* 40 sticks per serving!
* 2.5 grams of fat per serving (60% less than leading brands)
* 110 calories per serving
* 10 grams of Whole Grains per serving
* No cholesterol, no preservatives, no trans fats and no artificial flavors or colors
