Tonight was Mexican night! Ole! I decided to have a nice taco bake waiting for boyf when he came home from work. He loves coming home to a nice dinner on the table, but seriously, what guy doesn’t?
I added some ground turkey, 1 can of kidney beans and a taco mix into the pan. Let everything simmer and come to a little boil.
Once the taco mixture is ready to go, it’s time to have some fun! I busted out the Don Sabrosa salsa and it was time to make some layers. I put a tortilla on the bottom of a pan, spread some salsa, added some cheese and the taco mix.
Repeat above layering steps a few times! Put in the oven at 400 degrees for 17-22 minutes/until cheese on top is melted
I also made a massive salad to get some greens into our dinner.
Look at our table all set up and lovely. So pretty!
The taco bake turned out fabulous!
On my salad I had some Brianna’s New American dressing. I was sent a few bottles of Brianna’s to try and this is my first experience. Jackson was looking on trying to catch a glimpse of our lovely meal.
Jackson was sad we didn’t invite him to our dinner date.
Check out my plate. I figured I made about 6 servings of the taco bake, so I wanted to be conscious of the portion size.
The Brianna’s dressing was really good. It was a creamy balsamic vinegar. I love that the dressing is made with all natural ingredients. From Brianna’s website: “We sought out the best natural ingredients, like honey, balsamic vinegar, garlic, grape juice, spices, and more, then combined them to form a united nation of natural goodness.” I liked it a lot and so did boyf. I could see it going with so many things!
Boyf and I rarely get to sit down to nice meals like this so it was a treat. We turned off the TV, turned on some music and talked about our days. It was a lovely meal. I had some white wine with dinner and boyf had a martini. Cheers!
Check out the awesome layers in this taco bake! One reason I love making home cooked meals is leftovers. I have already packed up a little doggie bag for boyf to take in for his lunch at work tomorrow!
