Ever since my grocery run yesterday, I have been baking and cooking up a storm! I am so proud of myself and feel so accomplished when I make fabulous meals (and treats)! This wonderful treat is inspired by Angela over at Oh She Glows. I am an avid reader and fan of Ange and her recipes, and when I saw this little number pop up in her posts, I knew I had to recreate it and enjoy it myself! Here are all the ingredients I used!
Ingredients:
Wet
- 2 eggs
- 1 t vanilla extract
- 1/2 cup agave
- 1/4 cup organic virgin coconut oil
- 2 bananas mashed
- 1/2 cup milk
I received a lovely package from Singing Dog Vanilla a while ago and haven’t had the chance to use it yet, so I was excited today when I got to bust it out! It smelled great!
Step 1: Mix all the wet ingredients in a bowl and set aside. I had to use a mixer to make sure all the bananas were fully mashed down.
Dry
- 1 3/4 cup whole wheat flour
- 2 T wheat germ
- 1 t cinnamon
- pinch of fine grain sea salt
- 1 t baking soda
Step 2: Mix the dry ingredients together with the wet ingredients
Step 3: Place batter in a pre-greased pan
Step 4: Place in oven at 325F for 30-35 minutes.
While the bread is in the oven, you make the filling!
Filling
- 1/4 cup plain yogurt
- 1 T agave
- 1 heaping T peanut butter
- 1 small mashed banana
Step 5: Mix all filling ingredients together. Make sure banana is mashed down!
Step 6: Scoop filling into Ziploc baggie and set aside
Step 7: (Optional) Lick filling plate clean ?!?
Step 8: DING DING! Bread is ready! Take it out of the oven! Don’t let it burn!!
Step 9: Be proud of your baking accomplishments! You are a rock star and a fabulous chef!! 🙂
Side note: Not really sure why the bread looks a little lopsided. I am willing to overlook that fact if you are!
Step 10: After you let the bread cool down for a bit, you are ready to test out your creation! Slice out a piece and then grab your filling bag. You can cut out the bottom corner of the Ziploc bag to spread the filling over your piece. Go nuts!
Step 11: Isn’t it so scrumptious looking?!?!
Step 12: Stop staring at your beautiful treat and eat it already! 🙂
Step 13: Repeat step 12! And Enjoy!
I am pretty sure that peanut butter and bananas may go better together than peanut butter and jelly (GASP!) Anyone else out there feel the same way?
This bread rocked my world and the filling was to die for. The bread was so soft and moist and the filling was so full of flavor! I loved the banana bits in the bread! I can’t say enough good things about it! I know Angela made vegan muffins with this recipe by using a few different ingredients. I need to invest in a muffin pan! Another fabulous home made treat! Yum!
