Sweet Potato Snack

Its another wet and rainy day in Philly today. It’s supposed to be like this all weekend! Boo! I hope that it clears up in time for next weekend for the Philadelphia Half Marathon! 8 days baby! 8 days!!

Are any bloggers that are running next weekend interested in getting together at all for a meet-up? My schedule next weekend is kind of crazy, but I would love to organize something! Let me know!

On this dark and dreary day I decided to have a nice warm lunch/snack! This sweet potato has been hanging out in my fridge for a few days begging me to eat it, so I sliced it up for lunch today. I tried a new preparation method – using an apple slicer!

Sometimes it has been rough slicing up the ‘tater but today I used my normal apple slicer and it cut everything into nice and even slices!

After some additional slicing and some time in the oven, I was able to enjoy this massive plate of fries today! I am carb loading for next weekend, obviously! :)

I love me some sweet potato fries. They are fabulously tasty and nice and crispy from the oven ! Yum!

Now I am off to log in a nice long run, my last long run before the Philly Half next weekend! Is it bad I am using the excuse that I might slip on wet leaves as a reason why I am not going to run outside today?? I don’t want to get hurt before the big race!

ohh sweet potato fries are some of my favs!! I never thought of using an apple peeler

I have never been able to master the sweet 'tato fries. Mine are always mushy :(
