Vegetables Galore!

Since I recently became abundant with fruits and veggies I knew I had to serve them up for dinner tonight! The stars of tonight’s dinner show were baby peppers, baby carrots and baby potatoes! Oh baby!

I spy with my little eye a purple potato! Anyone ever seen one of these before? Why is it purple? What’s it called? Inform me please! I am oh so curious.

Into the hot tub the potatoes go, a la Rachel Ray. Anyone else a Rachel Ray fan out there? Yum-O?

I washed and cut up the peppers, carrots and some celery. I added some spinach to the mix and it was ready for the frying pan.

I have a little bit of spaghetti left in the pantry and wanted to save it, so I had my meal tonight with some rice. Fiancé bought this massive box of white rice I am trying to get rid of. I want to replace it with a nice big box of whole grain rice! Woop Woop!

Love me some vegetables. I really find it fascinating how much the spinach shrinks up when heated. It’s so cool! The only thing that was missing from this dish was maybe an onion.

I added 1/2 a cup of rice to the mix.

The flavor of the evening was some Curry Love. I used this sauce before with some veggies and chicken. I was lovely with all the veggies and the rice mixture. The sauce was very spicy! Yum!

I started making my meal and fiancé said he wasn’t hungry and didn’t want any. When I finished making my meal he asked where his bowl was! Boys will be boys!

It has been a long time since I have had some fresh veggies. I am seriously enjoying my meal tonight!

And now fiancé and I are watching Saint Ralph on Netflix. Synopsis: Ralph is a typical teenager with atypical questions, the largest of which concerns his mother. She’s fallen into a coma, and the 14-year-old has set his sights on winning the 1954 Boston Marathon in a makeshift barter with God to make his mother well.

I love this running movie! So far its awesome! Ralph is a dedicated little machine! He totally inspires me.

    I've never even heard of that movie. The documentary on the people running the Chicago Marathon was really good.

    the closest thing I've seen to a running movie was Forest Gump.. oh, I'm so useless! sorry girl! Hope you enjoy the documentary 🙂
