Questions Answered & Giveaway Winner

I know I mentioned before that I recently signed up for the Ask Me Anything program that has been hitting the blog world by storm. I wanted to take some time to answer a few of the questions I have received so far.

How did you meet your fiancé?

Fiancé and I went to Villanova together! I didn’t really meet him until our sophomore year of school, but we rolled in the same group of friends. The more and more I hung out with him, the closer friends we became. We were friends for 3 years before we started dating, which was awesome because when we went on our first date, it wasn’t like I was out with a stranger! I was out with one of my closest friends, and we just grew from there.

We recently celebrated our 4 years of dating, which was amazing. That post will give you a little more insight of our time together!

Why did you start blogging?

I started blogging right around the time when I first got Jackson. I wanted to have a virtual scrapbook of him growing up, and I wanted there to be a place for me to write about him, and post pictures of him and document all the cute things he did. When I first started blogging, I didn’t do it religiously at all, it was very sporadic. My first post is one of Jackson in his holiday outfits! He has always been my inspiration!

Do you like Philly? I’ve considered moving there.

I LOVE PHILLY! I went to Villanova, which is about 15-20 minutes outside the city, and loved the area so much that I wanted to stay after graduation. I stayed  and got a job and have pretty much been up here ever since! It’s a great city with so much to offer! I also love that its so close to everything. Its only 2 hours and 15 minutes to my home in Virginia, and only 2 hours away from NYC!

I do wish I took advantage of the city more. Fiancé and I live 4 miles away from Center City Philadelphia, which is super close, but sometimes going into the city and parking can be a hassle and we get lazy and venture elsewhere to meals and bars. I am trying to make more of an effort to check out the city more. There is still so much I want to see and do!

Egg and Spinach Strata

I couldn’t think of a better way to start off Valentines Day weekend that with a nice warm breakfast to warm the heart and soul. I am a big believer that a good morning meal is the absolute best way to get your day off to a good start!

I started off with some nice spinach.

I also added some Applegate Farms Organic Spinach and Feta sausage. If you couldn’t tell I love this stuff! I browned it up a little in the frying pan before adding it to the strata.

The star of the show was the Vermont Sweet bread. Yum!

I lined the bottom of a pan with some spinach, sprinkled in the sausage and bread (ripped up into pieces). I also added some green peppers and onions to get the strata a little something extra!

To my first layer I added a little bit of cheese

And then I piled on another layer.

And then maybe a little more cheese, with a side of Jackson.

Mmmm….cheeese.

And in honor of my morning monsters I topped it off with some more spinach. I love the green stuff.

Before I put this bad boy in the oven I made the filling, which consisted of  4 eggs, 1 1/2 cups of milk and salt and pepper all whisked together. I poured this into the strata before baking.

Cooked at 350 degrees for an hour, or until the top is golden brown and away we go!

All cooked and ready to eat! It looked like I could have added some more cheese to the top, but I didn’t want to overdo it! Without any extra cheese additions the strata was rocking!

It was a beautiful way to start my day!
