I have seen these cookie creations floating around the blogosphere for the past few weeks and I made myself a little note to try them out myself. Apparently these cookies are not bad for you (in moderation) and since I have the biggest sweet tooth ever, I was very intrigued! I made some alterations to the recipe based on what I had in my pantry and what I wanted in my cookies.
How To Make MY Version:
In large bowl combine – 1 cup oats, 2/3 cup flour, pinch of salt, 1/2 tsp cinnamon, sift in 1 tsp baking powder, a handful of coconut, handful of semi-sweet chocolate, and some shredded almonds.
I am not the biggest fan of measuring. I tend to just eyeball it! In this instance, what’s the worst that could happen? Too much chocolate?! There is no such thing!
So you put the dry mixture to the side and we will come back to it!
Also to that mixture add 3 tbsp nut butter. I used Tierra Farm’s Maple Cashew Butter. This stuff is pretty much heaven on earth.
Also to that mixture, add 1 1/2 tsp pure vanilla extract. I used the Singing Dog pure vanilla extract. And finally 2 tbsp organic canola oil
Preheat the oven to 350* – Combine the wet mixture with the dry. Spoon the batter into balls on a cookie sheet and cook for 13 minutes. Let cool, serve and enjoy!
These cookies turned out pretty yummy! Even fiancé liked them and that’s pretty much a win in my book. Getting a boy to eat healthy has proven to be pretty hard, but I welcome the challenge.
Obviously I had to enjoy one right away!
