Like many other things in my like the past two years, I first learned about quinoa from reading other healthy living blogs. I had no idea what it was, or how to even say it!

A few weeks ago I was tweeting with one of my local Whole Foods Markets (WFM Callowhill in Philadelphia!) and they were having a special quinoa demonstration. Those who attended were going to be given a free bag to take home with them. I couldn’t make the class, but since I tweet with them often, they still gave me a bag!

So the next time I was in the store, I picked up my little bag.

I didn’t even know how to pronounce it to ask for it at customer service because I had only ever read it online, never actually talked with anyone about it!

It was an embarrassing moment for sure! Anyone else ever have that happen to them before? Haha.

Quinoa is an ancient grain that is SUPER nutritious – it has a higher protein content than ANY other grain. It also contains all 8 essential amino acids. It is an amazing little little thing!

To prepare Quinoa:

  • Rinse before cooking – Hold in fine strainer under cold water until the water runs clear. Drain well.
  • Use 2 cups liquid per 1 cup quinoa
  • Combine in saucepan, bring to boil, reduce to simmer and cook until the grains are translucent and the germ has spiraled out from each grain
  • Cooking should take about 15 minutes

I toasted the grains in a dry skillet before I cooked them to give them a toasty, roasted flavor! Yum!

I also paired my first quinoa with some fresh vegetables – chickpeas, peppers and onions – Oh My!

As expected, after about 15 minutes, my quinoa was ready to go!

My complete meal -  It looks good enough to eat! Quinoa, veggies and a side of red wine + sparkling water!

I sprinkled some fresh lemon juice over everything. I love fresh lemon! Yum! eats 039 

This meal was equally yummy and delicious! You will be seeing quinoa lots more on the blog after this experience!

    I love quinoa. The possibilities are endless!! I sometimes make it like 'fried' rice. And I recently tried Quinoa bread from Trader Joe's. Delicious!

    I love Quinoa! The first time I had it was in CA and it was actually cold and sprinkled on a salad- really good that way! I like making it "mexican style" serving it with peppers, onions, tomatoes, salsa, etc… It's good to use in stuffed peppers instead of rice too. Enjoy!

    Is Quinoa a pasta or rice like dish? Maybe I'll try Quinoa in place of rice in a stir-fry. It looked delish all browned up. Is it crunchy that way?
