A SkyTop Hike

Remember 2 weekends ago when I stepped back from technology and didn’t turn my computer on for 4 glorious days? Well here is a little Friday afternoon post to let you know what I was up to!

Fiancé and I spent the weekend in the Pocono area of Pennsylvania. I had never been to this area before, other than possibly driving through it, and I was really surprised by how far away from reality it truly felt. 

Aside from the fact that there wasn’t internet where I was staying , which could be a good thing if you want to step back from technology for a day, or a bad thing if you are addicted to your computer, like I am, but I embraced my time away from the world wide web and explored some new territory!

Part of the weekend we spent at SkyTop Lodge which is a truly amazing place in the summer (and apparently the winter too!). This place has lakes and trails and all sorts of outdoor activities!

This area had a calming nature about it, all I wanted to do was spend the weekend outside!

Umm…can I move here and spend the rest of my life sitting on this little pier.

Fiancé and I, and his high school friend Joe (Hi Joe!) decided to hike around the Lake and check out some waterfalls a few miles down.

I know my training plan has been a little insane lately, so it was nice to step back and take this day to have a 5 mile hike as my cardio for the day. Walking with friends in the mountains is so fun!

After a while we reached our destination! We were a little disappointed by the lack of falls, which was due to lack of rain, but it was still fun to get to and these pictures make it look a little smaller than it actually was!

Since there wasn’t much to look at when we got there we decided to hike up the falls. The entire time we were climbing up the rocks, I kept thinking to myself, don’t hurt yourself, you have a marathon to run soon! Haha!

Ahhh…the mentality of a crazy runner!

We also hiked up to the top of the rocks above our heads in this picture and then decided to hang out in the water for a bit. We each had our bathing suits on so we took a nice little dip.

The water was pretty cold, but we got used to it after a while. It would have been perfect to jump into after a long training run!

I need to make the most of this hot weather and find some fun trails to frolick on in Philadelphia. The trees were a great form of shade and it was nice to hike on a trail with friends!

Anything that gets your heart pumping and blood flowing is a ok workout in my book!

A SkyTop Hike

Embrace the Green (Monster)

Ok, ok, the green monster never really left my little world, I just haven’t posted about it in a long time!

The other day I received a reader request to explain how I make my green monsters, so I figured I would start this Friday morning off with a little green monster post!

Green monsters are one of my all time favorite breakfast meals. I love the fact that I can get a massive bunch of spinach in my system bright and early in the morning! Spinach is so good for you! I swear since I had my first green monster (which was almost a year and a half ago!) I have seen improvement in my skin, my hair has been growing a lot and my nails are stronger! Woohoo!

My classic green monster smoothie includes:

  • 2-4 cups of spinach (depends on how big of a monster you want!)
  • 1 cup of almond milk
  • 1 banana (fresh or frozen)
  • sprinkling of flax seeds/wheat berries/chia seeds

I always wash my spinach before it goes in the blender. I know some people don’t wash their fruits/veggies before eating, but I am not one of those people. I always give everything a little rinse.

Then it’s time for everything to go into the blender! The spinach goes in first, followed by the banana.

To this monster, I added some Amazing Grass powder that I got in my HLS Swag bag this past weekend. I usually like to throw in some sort of powder to my monsters these days for a little bit of an extra kick. One of my favorite flavors to add is chocolate protein powder!

I love adding seeds to my monsters. I also really love not fully blending them in the smoothie. Flax seeds and wheat berries are the two most popular seeds in my monsters.

I like the little crunch that comes from them!

Next up is a very essential ingredient – Almond Milk! And this particular almond milk expires the day after my wedding day!

When it expires, I will be married! Haha!

For me personally, the almond milk combined with the banana overpowers any taste the spinach has, which makes it super easy to drink, and tasty too!

I put about a cup of almond milk in my monsters.

Last, but not least is the ice, which tops off the monster. This makes the monster cold and is very important to add!

Blend for a few minutes until your monster looks like this – pretty green and very bubbly! Yum!

I enjoyed my green monster in my Oddyssey Half Marathon finishers pint glass! This monster was a little different because of the Amazing Grass powder which had a lemon lime flavor to it, which I really enjoyed. I didn’t think I would like it in my monster, but I did!
