Quinoa Porridge

Let’s start off this Friday with a fun and different breakfast post, shall we?

If I don’t have something awesome first thing in the morning, my day will most likely not be off to the best start, and we all know how those mornings can be!

Breakfast is the most important meal of my day. It sets the tone for what’s to come. 

I got this new breakfast idea from a friend who works at Whole Foods and when I first heard the thought I wasn’t convinced, but I am adventurous when it comes to trying new things so I figured that sometimes you just got to GO FOR IT!

The concept – quinoa for breakfast.

It is meant to be a sort of oatmeal replacement with possibly additional nutritional values. Here are the details –


4 cups coconut milk, 2 tsp. vanilla extract, 1 cup quinoa, 2 tbs. agave nectar. 1/4 cup cranberries, 1/4 cup fresh berries

I started off by bringing the coconut milk and vanilla to a boil over high heat.

I then stirred in the quinoa and let it simmer for about 20 minutes over low heat, stirring occasionally until all liquid is absorbed.

When the liquid was all gone I removed it from heat and then added the agave nectar and cranberries to the mix.

After everything was mixed together I topped the quinoa porridge with fresh blueberries and then it was time to eat!

I think the dish looks very pretty and it looks like oatmeal for sure! The agave nectar give the mix a little sweetness and the cranberries give a fruity tanginess as well.

I thought the meal turned out great! It was tasty with lots of good stuff going on in my bowl, so I really enjoyed it. I will definitely be having this again!

I also thought it was a great way to get a little extra somthin’ somethin’ to boost my regular breakfast. I have another long run planned for bright and early tomorrow morning, so I am sure something like this will keep me fuller, longer!

    That looks really good! It's just like having a bowl of oatmeal only more healthy. Good idea before a long run, you'll need the extra staying power for sure!

    I have been wanting to try this, it looks really good. I usually put quinoa or millet in with my overnight oats.

    I just had quinoa for breakfast today! And posted about it:) haha What a great idea to use coconut milk (I just used water.) It definitely adds a little somethin' somethin'.
