Spaghetti Squash

Since  I have already attempted mastering the art of the butternut and acorn squash this Fall I figured, why stop there? Bring on the spaghetti squash! I am ready for it.

I love the pretty colors of all the squashes this season but I very much enjoyed the yellow color and football shape of this spaghetti squash.

The little nicks and imperfections of the squash even made it more appealing to me. I couldn’t wait to cook it!

I had questions about cooking spaghetti squash myself, but right when I needed it Heather posted on how to cook spaghetti squash. I followed her lead and it all turned out magically!

First I sliced this beautiful yellow squash down the middle. It was difficult at first, but I got it eventually.

Speaking of gourds, if you are interested in a good laugh, check this out – and don’t be offended by the harsh language please. I found it extremely hilarious!

Back to dinner! I scooped out the guts of the squash with my melon baller (which I have used SO many times this season!) and then came the fun part!

I love spaghetti squash so much because it looks so freaking cool!

Slice your fork down the middle of it and WAM! you have spaghetti.

After some serious scooping to get out all that delicious squash you will end up with something like this.

Doesn’t it really look like spaghetti! I bet you could fool some people into thinking that’s what it is!

I paired the squash with this amazing vodka sauce which I had been saving from my Taste of the Nation experience in Philadelphia this past June.

Spaghetti squash + vodka sauce with a side of steamed broccoli and cauliflower and this was really a meal made in heaven.

The squash had an amazing little crunch to it, and the sauce made it taste even more amazing. I also liked it paired with these two other veggies, they were very complimentary to the flavors of the squash and sauce.

The best part about this was that it was a Fiancé approved meal. Some of the crazy things I make around here aren’t always his cup of tea, but I got his approval to make this again!

Now that’s when you know it was an amazing meal.

Trick or Treat – Panda Licorice Giveaway

Can you believe it’s Halloween this weekend? Where did October go? It seriously flew by!

Even though I started this week with a fun giveaway, I figured I would end it with another one too, it’s Halloween after all, and there are lots of treats to go around!

I have posted on the blog many times before letting the world know that I have a serious sweet tooth. It’s not something I am ashamed of – I wear my sweet tooth with pride.

While I am a big fan of the occasional sweet, most of my go-to treats aren’t the healthiest options. I have been searching for something made with natural ingredients that will calm my cravings for some time now, and I am happy I found something I really like.

Enter Panda Licorice

Here is a little licorice history for you : For thousands of years licorice has been believed to hold mystical healing powers. People have used licorice to ward off evil spirits and as a remedy for stomach complaints, as well as cough and chest infections.

Pretty cool, right? I never knew that about licorice!

Panda Licorice is all-natural and has no artificial colors, artificial flavors, preservatives, hydrogenated fats or salt. Panda is also suitable for vegetarian, vegan and Kosher diets. It comes in three flavors – original black, raspberry and cherry.

I am a big fan of licorice, it really is a great little snack. To me, its the perfect little sweet treat I need to calm my cravings.  I am even a bigger fan of the soft-eating licorice, specifically the raspberry flavor! Yum!

The wonderful people at Panda sent me some awesome treats to enjoy this Halloween season, I have been snacking on their 100 calorie bars all month! So soft and delicious and I love that they are individually wrapped – it keeps me from eating a whole bag!  They have been great for giving me a little energy boost before a run too!
