A Mexican ‘Heavy On The Beans’ Casserole

Tonight’s dinner was created because I was inspired by Caitlin’s Cheese less Pasta Bake and Anne’s Brown Rice Casserole.

I feel like I am always attempting to use what I have in my fridge and pantry before I buy food, but since I love food shopping (and regular shopping!), this is harder than it sounds! Tonight I was able to use a bunch of ingredients I already had on hand, which is always awesome!

I started off boiling some water and letting rice cook on the stovetop.

Most of the ingredients I used for this meal tonight I had on hand because they were coming out of cans. I love to use fresh whenever possible, but canned veggies are better than no veggies, right?

Into a large bowl I combined a can of black beans, pinto beans, corn as well as some tomatoes and jalapenos.

This is where the meal gets interesting. Instead of using cheese, I trusted Anne and Caitlin’s suggestions to just use hummus!

I was sent some Wild Garden individual hummus dips which I was able to use for this recipe.

Kind of weird looking, but the to-go packaging actually works pretty well!

I added 3 of the packets to the mix and then topped everything off with some fresh red and green peppers. I had to get some fresh veggies in there somehow!

Combine the rice in the bowl with the veggies and the beans. Then put everything into a pan and cook for 20-25 minutes at about 350*

It will come out of the oven a little browned at the top and bubbly.

Can you believe there is no cheese in this? Pretty awesome if you ask me.

I enjoyed a nice sized helping of this casserole and enjoyed some Beanitos Black Bean chips for dipping.

I was a lovely meal – heavy on the beans! 🙂

Fiancé enjoyed his with a dollop of sour cream while I topped mine with a spoonful of guacamole. Both toppings were delish!

    To be perfectly honest the idea of not having cheese with my beans doesn't compute and I can't comprehend it. I will have to consider this further. Looks pretty tasty!

    Your dish looks very colorful and certainly fresh! I'm not a bean lover, but glad you and fiance are!
