For me, it was hard to think of an incredible recipe that is quick, easy to make and only included 6 ingredients. But as soon as I figured out what I wanted to make I was very excited!
I give you – Pumpkin Penne – the perfect fall dinner feast!
Ingredients:
- 1/2 box whole wheat penne
- 1 onion
- 1 teaspoon EVOO
- 1/2 can pumpkin
- 1/2 cup mozzarella
- 1/2 cup skim milk ricotta
- 1/4 cup bread crumbs
How To :
- Prepare pasta al dente. Reserve 1/4 cup of the pasta water for later.
- Thinly slice the onion, sauté in EVOO for 10-12 minutes, until caramelized.
- Combine pumpkin, mozzarella & ricotta in a bowl followed by the sautéed onions. Then add pasta water slowly to the bowl to thicken the sauce.
- Next add the pasta to the sauce followed by putting the pasta mixture into a baking dish.
- Add bread crumbs to the top and bake at 350* for 30 minutes
- Serve & Enjoy!
Side Note: To alternate the 6 ingredients you can add 3 teaspoons of brown sugar (and mix in with the cheeses) and remove the bread crumbs or visa versa which is what I did this time. The sugar can give it a hint of sweetness but both variations – or even a combination – are lovely !

I just tried your pumpkin penne recipe, and I really liked it!
My favorite six ingredient meal is a calzone.
I used a tube of pizza crust, ricotta, mozarella, and parsley.
Super easy and delicious.

I love roasted asparagus – tossed in olive oil, salt and pepper, roasted in the oven, then covered with Parmesan cheese and lemon juice!
Can it be breakfast?
Steel cut oats, milk, crusted hazelnuts, coconut flakes, honey & banana slices.
My favorite 6 ingredient recipe is cucumber and tomato salad (which I’m eating as much as I can as long as tomatos are in season still!)
1 1/2 cups cucumbers thinly sliced
1 1/2 cup tomatos sliced or cubed
2 tablespoons splenda
1/2 cup water
1 teaspoon dill weed
Combine all ingredients in a bowl. Refrigerate at least one hour before serving. (The long you let it sit the better!) Enjoy!

I love frittatas for a 6 ingredient recipe! Eggs, splash of milk, cheese, veggies, fresh herbs, sausage!
My mom’s banana pudding is to die for. It’s simply banana flavor Jello pudding, banana slices, vanilla wafers, and Cool Whip layered in a clear glass bowl. Set in the fridge overnight and it’s ready!
Vegetarian Stuffed Peppers are always really yummy and really easy and can be on done with only 6 ingredients
-bell pepper
-cooked couscous, or other grain
-black or red beans
-diced tomatos
-onion
-a bit of cheese

My favorite 6 ingredient or less recipe is for Vegetable Quesadillas. It’s simply tortillas, zucchini, bell pepper, mushrooms, and cheese. Yummy! 🙂
My mom makes a great “Arroz con Pollo” (Spanish chicken & rice) in 6 ingredients or less. It’s basically just chicken, olive oil, Sazon Goya, Vigo brand yellow rice, and green olives. So yummy!

Your creation sounds wonderful! My favorite 6 ingredients or less is tomato caprese skewers–easy with mozarella, tomato, basil, and balsamic vinegar.
A friend of mine recently shared a recipe with me for Chicken Tortilla Soup – 1 15 oz can whole kernel corn, 2 14.5 oz cans chicken broth, 1 10 oz can chunk chicken, 1 15 oz can black beans, and 1 10 oz can diced tomatoes w/ green chili peppers. It takes 5 minutes to prep and tastes delicious!
This looks like a great meal for fall!

Mine would be sun-dried tomato pasta salad: sun-dried tomatoes in oil, basil, and parmesan blended in a food processor. Throw over cooked pasta and done!

Mine is actually 7 (chopped walnuts brings the total to 7), but I’ll make it 6 today:
Six Layer Bars – stick of butter, graham cracker crumbs, white choc. chips, shredded coconut, dark choc. chips, condensed milk. Put it together in that order, bake for 20ish mins. and enjoy!
Favorite recipe with 6 ingredients or less…does cereal + milk count?? I’m not a huge cook and most of the things I DO know how to make (and enjoy making) require more than 6 ingredients! I’m looking forward to checking out everyone’s recipes!

My favorite 6-ingredient recipe is Baked Eggs with Tomato and Spinach: 8 eggs (separated), half an onion, bunch of spinach, can of diced tomatoes, Parmesan Cheese, Mozzarella Cheese.
Mix eggs whites with cheeses. Saute onions, add spinach and tomatoes. Add to egg mixture and pour into small baking pan. Top with egg yolks and bake at 400 degrees for 25 minutes until puffed and golden. Delicious with crusty french bread!
That sounds delicious!! If you like that, I’m sure you’d like eggs baked in a tomato. Cut the top off a firm tomato, and gut it. Place an egg in the tomato, sprinkle with salt and pepper and bake at 425 for about 10-15 minutes.
My favorite simple recipe is all carbs and cheese. It’s the Mac & Cheese from the NY Times: butter, extra-sharp cheddar cheese, cheddar cheese, elbow pasta, cayenne, and whole milk.
Love the pumpkin pasta. My favorite dish would be a simple pasta with a brown butter and garlic sauce. I also follow on FB and Twitter.
My favorite recipe woule be Edamame, Corn and Tomato Salad – just mix those three ingredients with cilantro, avacado, and lime juice.
That looks so yummy! My favorite simple meal would have to be veggie enchiladas: tortillas, beans, veggies, rice, enchilada sauce and cheese 🙂

OK, it’s not usually a meal (but sometimes it is in our house!) Spinach artichoke dip = frozen spinach, canned artichoke, cream cheese, shredded mozzarella, oregano and red pepper flakes!

I have a major sweet tooth so Rice Krispie treats are a great under 6 ingredient dessert!
I tried a Pumpkin Penne bake last year and it was AMAZZZZZZING and I cannot wait until I can make it again!
My favorite dish with 6 (or less) ingredients is Catalina Roast.
1 rump roast
2 bottles Catalina dressing
1 package dry lipton onion soup mix
In large bowl, mix onion soup mix and Catalina dressing (to get the best bang for you buck – after pouring the dressing, add a little water to the dressing bottle and shake to insure you get all the goodness out – it’s ok if water is added!). Place in the crock pot and cook on low for 6-8 hours.
My morning oatmeal mess 1. Oats 2. Frozen blueberries 3. Banana 4. Greek yogurt and 5. Cinnamon
It’s not really a recipe but throw those 5 ingredients together and you have yourself 1 awesome meal!!

Potato Soup with Bacon
(very thick and creamy, and I leave lots of potato chunks in it)
5 slices bacon
5 russet potatoes
2 cans chicken broth
about a cup of half and half
garlic and onion to taste
I bake my potatoes first, sometimes the day before. Peel when cool.
Chop bacon into small pieces and brown in pot. Remove from drippings and set aside. Simmer garlic (I use 3-4 pods, minced) and one chopped onion in bacon drippings until transparent, about 5 minutes. Next, add two cans of chicken broth and the potatoes that have been chopped into small pieces. I also add a bit of water to get he right proportion of liquid to potato. I let this cook for 45 minutes or so until the potatoes have started softening and dissolving. At this time I use a masher to mash until I get the consistency I want.
I stir in half and half about five minutes before I serve, and I also add the crumbled bacon at this time.

My favorite 6 ingredient or less quick and easy recipe is my Easy Bake Cheesy Lasagne
Box of penne pasta
Jar of any spaghetti sauce of your choice
One package of low fat cheese of your choice
Package of lean ground beef or ground turkey
Dash of all-purpose seasoning.
Brown your meat and then stir in sauce. In separate pan cook pasta. Then layer in a baking dish pasta, meat/sauce mixture, cheese- finishing with cheese on top. Bake uncovered for 20min on 375. Serve with french bread and most people would say wine but I don’t drink so sweet tea!
Favorite 6 ingredient recipe: instant chocolate pudding! Pudding mix and milk. (oh and a whisk)
My favorite 6 ingridient or less recipe is my Mexican dip!
1 8oz container of cream cheese (i use reduced fat)
1 can of hormel vegetarian chili w/ beans
1 2 cup packet of yellow cheese (i use sargento Mexican mix)

Layer the ingridients in the order they are listed and put in the oven at 350 for 20-30 minutes. AMAZING!!!!
My absolute favorite 6 ingredient (or less) recipe … especially this time of year, is pumpkin spice cookies…
you mix a 15 oz can of pure pumpkin with a spice cake box mix and put them on a cookie sheet and in the oven… you can add raisins if you’d like (which i do) and ice with cream cheese icing…

Thanks for this awesome recipe — I’m actually making it tonight! My favorite 6 ingredient (or less) recipe is laughing cow chicken. Basically, you mix laughing cow cheese wedges with some garlic and onion salt, roll it up in chicken, and then add breadcrumbs. Delicious, especially w/all the laughing cow cheese varieties!

Honey-Soy Pork Chops
1/4 cup lemon juice
1/4 cup honey
2 tablespoons reduced-sodium soy sauce
1 tablespoon sherry or unsweetened apple juice
2 garlic cloves, minced
4 boneless pork loin chops
combine the first five ingredients. Pour 1/2 cup into a large resealable plastic bag; add pork chops.
Drain and discard marinade. Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack.
over heat for 4-5 minutes on each side or until a meat thermometer reads 160°, basting frequently with remaining marinade.

my favorite 6 ingredient dish is tortilla espanola, which i learned how to make while living in spain. SO unhealthy – i probably make it once or twice a year – but i swear the Heavens open up when i do 🙂

My favorite six ingredient recipe is my family’s recipe for stuffed green peppers! All it requires is rice, tomato sauce, ground turkey (or hamburger), green peppers, onion and mozzarella cheese. Its been my favorite since I was little 🙂

3 plum tomatoes
1 cup of fresh or frozen corn
1 avocado
1/2 cucumber
1 lime
Chop all ingredients and add the juice of 1 lime.
Mix, chill, and serve! I usually serve on top of a baked chicken breast.

I guess that is only five ingredients not including pepper and salt.
My husband makes a great pasta dish that involves Italian sausage, pasta, jarred pasta sauce, canned tomatoes/tomato sauce, stock and parmesan cheese. (It may be more than six ingredients depending on what spices you add, but it can definitely be done with six, and it tastes amazing!)

Eggplant Parm. My husband rocks this yummy amazing, healthy eggplant parm! Eggplant, bread crumbs, sauce, mozzarella cheese oooo yum!
My favorite thing to make is apple peach sauce! So easy and yummy
In a crock pot put 2/3 rds cored and cut apples 1/3rd peeled and cut peaches cook on low 12 hours. No need to add sugar! Sometimes I add a generous amount of cinnamon. And when peaches are too expensive I use pears (just core and cut).
After 12 hours mash with a potato mashed or blend in the blender

My favorite simple recipes with less than 6 ingredients are hands down crock pot recipes! Salsa chicken, cream of chicken, pulled pork…yum!

My favorite six ingredient recipe: chicken caprese
Boneless chicken breast
Fresh spinach
Fresh garlic to taste
fresh mozzerela
balsamic vinegrette dressing
fresh tomato, sliced
evoo, salt, peppe
Marinate chicken in dressing at least 30 minutes, then grill. Saute spinach, chopped garlic in evoo until limp. Salt and pepper to taste. When chicken is about done, place sauteed spinach on each chicken breast. Add a slice od fresh tomato to each. Top with fresh moz. Keep on grill until moz is melted, then serve.
Easy, simple and healthy.
Your creation is so exotic, yet easy to make! My favorite recipe is actually fewer than 6 ingredients- Teriyaki Chicken:
Chicken breasts
Dry seasoning
Teriyaki Sauce
Teriyaki Glaze.
I season the chicken and bake it in teriyaki sauce. Once it’s done, I coat it in teriyaki glaze and bake another 5 minutes. Delicious!
Love your pumpkin penne 🙂 My super easy go to recipe is really for hubs, he loves it. It kind of is old school, mymom made it for us as kids. Elbow noodles, ground beef, corn, tomato sauce and cheese. All layered up like a big cheeseburger casserole.

Sounds great! I like to toss chicken, mushrooms, and broccoli slaw in a pan, cook them up, and then add a bit of orange, red pepper flakes, and soy sauce. Instant orange chicken!
looks so yummy my fave 6 ingredient is slowe cooker shepherds pie.
Brown 1. 1 lb ground beef , drain,, 2. chop onions, make some 3.mashed potatoes, throw on some4. cheddar cheese and 5. corn and 6.chopped red peppers. Throw it all into a crockpot and cook for 6 hours on low.. Easy and delicious

(1) Trader Joes Herb and Cheese Pizza Dough
(1) Trader Joes Pizza Sauce
16 0z of Mozzarella Cheese
(4) medium sized Organic Roma Tomatoes (from garden)
(1) handfull of fresh Basil
Ranch
Cook dough with just sauce, cheese and basil and then add tomatoes at the end so they’re cold. Dip hot/cold mixture into pool of ranch. Enjoy!!

Fall is my favorite solely because of all of the amazing pumpkin recipes floating around the blogging world! 🙂 I’ve got to make this dish!!! Here’s my favorite simple go-to 6 ingredient recipe.
Naan Pizza with Basil Pesto
1 naan flatbread
2-3 Tbsp basil pesto
4-5 baby portabella mushrooms, sliced
4-5 sun-dried tomatoes
4-5 black olives sliced
¼ cup goat cheese (less or more depending on what you like)
Preheat oven to 400. Spread the pesto on the naan and arrange your toppings. Bake naan pizza on baking sheet for 7 to 9 minutes.

My go-to 6 ingredient recipe is!:
– 1 box corn/gluten free shells
– 1 cup cubed extra firm tofu
– 2 huge handfulls of fresh baby spinach
– A couple tablespoons of extra virgin olive oil
– About 1/4-1/2 cup graded Pecorino Romano
– salt and pepper to taste
Cook the pasta according to directions, lightly saute the cubed tofu with olive oil, toss the spinach in with the warm pasta once it has been drained, stir the spinach in with the pasta and add the rest of the olive oil, stir, toss in the tofu with the pasta, stir, toss the cheese in, stir, salt and pepper to taste… Enjoy!

My fav 6 ingredient recipe is a quick pasta dish…
1 lb rigatoni
1 large onion, chopped
a couple of cloves of garlic, minced
1 lb fresh tomatoes, chopped
handful of basil, roughly chopped
1 lb fresh mozzarella
2 tbsp olive oil
salt & pepper
Cook pasta according to package instructions. While the pasta is cooking, saute the onion and garlic in olive oil over medium heat, then add the chopped tomatoes. Season with salt and pepper, to taste. Cut the mozzarella into bite sized pieces, drain the pasta (when it is al dente) and toss everything together. Top with the chopped basil and you are good to go!
