I recently went to a nutrition workshop where Alene Brennan gave coaching about amazing seasonal eats for the winter. She gave amazing information and even brought some tasty treats along with her! My favorite of the evening was by far the Sweet Potato Soup!
I loved it so much, I wanted to share the recipe with you all!
Ingredients:
1 lb sweet potatoes, peeled & chopped
1 cup red lentils, rinsed
1/2 cup dried apricots, rinsed
1/4 cup onion, chopped
1/2 tsp red chili paste
4 cups organic vegetable broth
3/4 cup light coconut milk
salt to taste
Directions:
1. Place the first 6 ingredients in a large pot and bring to boil. Reduce to low heat, cover and simmer until all ingredients are soft and the lentils are falling apart (approx. 25 minutes). Let soup sit uncovered for 10 minutes.
2. Add coconut milk. Using a blender, puree soup. Add salt to taste.
3. Garnish with cilantro, pomegranate seeds or any other tasty treat. Serve & Enjoy!
