Tomato Bisque

Today is day 3 of my fruit cleanse! I made it 3 whole days and survived on only fruit! Woohoo! And let me tell you, it wasn’t the absolute worst thing in the world! The first day and a half were a little rough, but honestly I am doing ok – not too sick of fruit and I was never really hungry. I feel pretty amazing right now to be honest with you!

One recipe that helped me survive the fruit cleanse is this Tomato Bisque – I was a little over the sweetness of the fruit and needed something a tad more savory, but also clean and within my dietary restrictions! I don’t even like tomatoes, but after 3 days of fruit, this little number hit the spot!

Ingredients

15-20 Roma tomatoes, cut in half

3 cloves of garlic, sliced

1 bunch fresh basil

Cook tomato in a stock pot with garlic on medium heat.

After approximately 40 mins add fresh basil and turn to low for 20 mins.

Turn off heat and mash in pot with potato masher.

Serve & Enjoy!

The only modification I might make next time would be to strain the soup a bit, it was very chunky (but also very delicious!), and it couldn’t get any easier!

    I’m with you, I would have strained the seeds first and then blended it so it was not chunky at all, just smooth. Looked delish !
