Bean Soup + Cilantro Lime Rice

Another Iowa Girl Eats recipe was put to the test tonight.

Another success in the kitchen!

Tonight on the menu – Bean Soup + Cilantro Lime Rice!

I was feeling a need to make some soup to warm my soul on this rainy day in Philly.

The recipe starts out with sautéing 1/2 an onion until soft with a little oil along with some salt & pepper.  Next up, add 2 cloves of garlic, minced. Then add 1/2 tsp Cumin, Red Pepper Flakes & Cayenne Pepper

Next, add 2 cans of beans – I used 1 Black & 1 Pinto, you can also use 2 cans of Black Beans. Also to the mixture add 1 cup of water & 1 cup of chicken broth – bring that bad boy to a boil!

Then it was time for me to christen my immersion blender for the first time.

It was a little touch & go there for a few minutes.

I must admit, I made a little big of a mess…

But eventually I got the hang of it – Immersion Blenders are fun!

I blended about 1/2 of the bean mixture, leaving the other half full of chunky beans which gave the soup a great texture.

The finished soup creation was ladled over a long grain white rice that was topped with cilantro and the juice of one lime.

Like I said, another successful dinner is served!

    That immersion blender sure blends well, but a little messy! Your soup turned out awesome!
