This gorgeous Spring weather in Philadelphia has me craving salad’s like woah.
Fall and Winter were all about the soup’s for me but Spring & Summer are about the salad’s! Seriously, there is nothing better on a warm spring day than sitting outside, soaking in the sun and enjoying a fresh salad. Maybe add an ice cold beer to that mix and you are good to go. But today it’s all about the salad.
My good buddy Aileen came over the other day and we went grocery shopping together to pick up ingredients to make a yummy meal at home. We ended up combining all of our favorite ingredients into one seriously booty-kicking salad!
Here’s what’s in our Spring Salad mix:
- 1/2 bib lettuce {the hydroponic bibb if you can get it!}
- 1/2 arugula lettuce- the fresher the better
- a handful of grape tomatoes, cut in halves
- 1/2 red bell pepper, chopped – any bell pepper will do, I just love the sweetness of the red ones
- 1/2 avocado, diced
- 1-2 tablespoons sunflower seeds
- a nice sprinkling of goat cheese
Lots of goodness going on in this salad. I’m officially obsessed.
I may or may not have had this for lunch every day this week…ok, I did! The combination of everything is just so perfect together, it’s so easy to love. And it keep you full for a long time, which is always great as well.
The perfect salad is topped with the perfect dressing – balsamic & olive oil with 1/2 a fresh lemon juice squeezed in – combined in my favorite little salad dressing mixer from Crate & Barrel. So much better than any salad dressing bought from the store.

Looks delicious!! I am the same way, I crave soup in the Fall & Winter and salads in the Spring & Summer. My fave salad is baby spinach, strawberries & goat cheese topped with balsamic vinegar.
