These days, when I want something to eat {and I can’t get it delivered} I immediately grab my keys & head for the grocery store to make it myself. I am embracing the cravings, especially when they are of the healthy variety! The other day I had some quiche at my mother-in-law’s house and it was out of this world. I wasn’t surprised when yesterday the sudden urge for more quiche came over me. I looked up some quiche recipes online, found a good one & went to work.
Let’s cross our fingers that all my cravings going forward include spinach & asparagus, ok? Highly unlikely, but when it does happen – I just got to go with it! For this recipe I was really excited to combine one of my favorite cheeses – Feta! – with some yummy greens and a flakey crust. Yum!
How To:
- Preheat the oven to 375 degrees* Line a pie plate with dough – I used Trader Joe’s Pie Crusts.
- In a large skillet, heat 1/2 tsp. olive oil over medium heat. Add 10 asparagus spears – ends removed and cut into small pieces , and 1 bag of baby spinach (or 4 cups, same thing!). Cook until asparagus spears are slightly tender and spinach is wilted. Squeeze out as much liquid as possible from the spinach after it’s cooked – you can do this by draining in a colander.
- In another large bowl, whisk together 5 large eggs and 1 cup skim milk. Stir in 1 cup feta and 1/4 cup shredded mozzarella cheese. Season with salt and pepper to taste.
- Place asparagus pieces and spinach on the bottom of the crust. Pour the egg & cheese mixture over the vegetables and into the crust.
- Bake the quiche for 45 minutes or until quiche slightly golden brown. Let stand for 15 minutes before serving.
Seriously, this turned out to be such an amazingly tasty meal – and Charles loved it too! The feta gives the quiche such a great kick, and the asparagus & spinach combination is always a good one. One side of the crust got a little burned {our oven is old as the hills} but it was just a little bit on one side so it wasn’t a meal breaker.
This quiche definitely hit the spot & I will definitely be recreating this again soon. Now I am just wondering what other vegetable combinations I could play around with…so many amazing veggies to choose from!

I love quiche and egg dishes in general for a quick weeknight meal. I also love that you can pretty much add whatever veggies you have on hand. Asparagus is one of my favorites!!
Yum! Looks so yummy! Spinach is one of my all-time favorite vegetables, so I think it works perfectly in this recipe!

I think this is a great idea but was wondering what size of pie curst you used? I tried it with a 9” crust and had left over egg.
Tarrah, I believe I used a 9″ crust pan – I used a pre made crust from Pillsbury too.
