Sometimes you just have to combine two recipes to get what you want – which is what I did to get this very tasty dish. I saw these two creations the other day, and since I’m not eating chicken these days, I wanted to bring together these two meals together to make something that would hit all the yummy foods I was currently craving!

I don’t normally cook with hot sausage, but I totally will be from now on {not to mention Charles loved it!} I picked up the meat from whole foods and the butcher removed the meat from the casings for me, which made the whole process so much easier too. I love how the spiciness of the meat really comes through in this dish plus all the extra veggies and sauce creation is just an added bonus.

I loved everything about this dish and will totally be making it again as the weather gets cooler! Check it out and let me know what you think!
Ziti with Sausage and PeppersIngredients

  • 2 tablespoons extra virgin olive oil
  • 1 pound hot Italian sausage, casings removed
  • Salt and pepper
  • 1 large onion, chopped
  • 2 fresh chiles, sliced
  • 2  bell peppers, chopped
  • 3 tablespoons fresh rosemary leaves, chopped
  • 4 cloves garlic, chopped
  • 1/2 cup dry red or white wine
  • 2 28 cans San Marzano tomatoes
  • 1 cup vegetable stock
  • 1 pound ziti rigate
  • 1 cup grated Pecorino or Parmagiano-Reggiano cheese

Spicy Ziti with Sausage and Hot & Sweet Peppers

How To

1- In a large Dutch oven, heat olive oil over medium-high heat. Add the sausage and season with salt and pepper, breaking it into crumbles as it browns.

2- Add in the onion, chilies, peppers, rosemary and garlic – stir a couple of minutes. Deglaze the pan with the wine. Add the tomatoes and stock, and simmer for 30 minutes.

3- Bring a large pot of water to a boil. Salt the water and cook the pasta to al dente. Ladle out about a cup of the starchy cooking water and add to the sauce.

4- Drain the pasta and return it to the pot. Add the sauce, tossing with tongs for 1 or 2 minutes for the flavors to absorb. Serve with cheese.
