Creamy Chicken and Rice Soup

I am constantly trying to find recipes that work for both Charles & I as well as our little man, Brooks. We have been doing the whole baby led weaning thing for a few months now, and it’s been going great, but I have been surprised with the amount of work it takes to prepare food for myself, my husband and my little man {who is 8 months old and only has 2 bottom teeth}. So when I was given the opportunity to try out Success® Rice and share a recipe with not only my readers, but my little man too – I was all over that!

I was pleasantly surprised with the Success® Rice website when I found out it has more than 300 recipes from breakfast to dessert {rice for dessert? what?} And I spent a good amount of time going through all the options, because I wanted to find one meal that would be tasty & delicious for Charles & I, while at the same time be easy to make {with a 8 month old crawling all over me} AND that same said 8 month old would actually be able to eat & enjoy with us as well.

Enter Creamy Chicken & Rice Soup.

Soup makes me happy in the Fall & I knew that by creating the chicken bits a little on the larger side, Brooks would be able to grab & eat it himself {a la baby led weaning} So it sounded like a win/win for everyone involved. Here’s what the recipe called for:

Ingredients

  • 1 bag Success® White Rice or Success® Brown Rice
  • 2 cans (14 oz. each) chicken broth
  • 1 can (12 oz.) evaporated milk
  • 4 Tbsps cornstarch
  • 1 tsp poultry seasoning
  • 6 oz. cooked chicken breast, diced
  • 1 cup frozen mixed vegetables, thawed
  • salt and ground black pepper, optional

I would like to add that I followed the recipe pretty much exactly, except for the frozen veggies. I had some fresh corn and peppers and carrots on hand so I added those into the mix along with some green beans and peas.

How To:

Prepare rice according to package directions.

In a large pot, bring chicken broth and evaporated milk to a boil. In a small cup, dissolve cornstarch and poultry seasoning with 4 tablespoons water and stir into hot broth. Stir constantly for 1 minute; reduce heat to low and stir in diced chicken and vegetables. Continue to simmer 5 minutes. Stir in rice. Season with salt and pepper, if desired.

This recipe was so easy for THIS busy mom to make work after a crazy day.

I loved it. Charles loved it.

and {most importantly?} baby loved it too!

Brooks chomped on the chicken like a champ and enjoyed the veggies and the soup flavoring as well. PLUS it made leftovers {which is always amazing} so we will have more again later this week! Yum!

    What an easy recipe for your family and I experienced the meal first hand myself when Brooks was eating it – he loved it! A must try for me too!
