Crock Pot Loaded Baked Potato Soup

 I’ve been on the biggest crock -pot / slow cooker kick ever lately.

Side Note: Do you say crock-pot or slow cooker? I can never decide which words I want to use!

Seriously, it’s the best thing ever for a busy mom with a little man crawling around. I’ve been slow-coopering up a storm lately, trying a new recipe or two each week – it’s been awesome and has been making my life so much easier and much more tasty!

But today is all about the Loaded Baked Potato soup! Soups have been a must-have on my menu planning lately because  it’s another meal that little man can enjoy. This is a warm, filling and tasty meal that was easy to throw together in the morning during a nap and was ready just in time for dinner. Plus it made a TON so we had lunch leftovers for days, which is always awesome.

I also enjoy anything I can top with green onions, cheese and bacon. What’s not to love about hat killer combo?

    I LOVE soups and thank goodness my family does too. We have a few favorites – French Onion and Carrot Ginger Soup. Question – could I make my own rue in place of the evaporated milk? The soup looks amazing…pinning now!

    This is one of my favorite meals as well! I fact, I just made this soup yesterday (similar but a few variations). Our boy loves it too. I’ll have to give your recipe a try one day.

    Love Potato Soup, Broccoli/Cheddar and Butternut Squash the best – your recipe looks awesome and I will make next week. Did you cut your potatoes in half or quarters before you placed them in the crock pot?

      I cut them in small slices and they broke up a bit more as they got hot!
