Green Chili Chicken Enchiladas & Veetee Rice Giveaway

I made these bad boys about a few weeks ago when I shared this yummy photo on Instagram and I realized that it was high time I shared a recipe too! These green chili chicken enchiladas are simple to make, full of flavor and great to make ahead of time and freeze if you have an event coming up!

Green Chili Chicken Enchiladas

How To Make the Enchiladas:

  1. Preheat oven to 400*
  2. In a large bowl, stir together 1 cup sour cream, 1 1/2 tsp. cumin, 1 tsp. chili powder, juice from 1/2 lime and 1/4 cup sliced green onions. 
  3. Add in shredded chicken from 1 rotisserie {about 4 cups} and 1/2 cup of Veetee rice and toss to coat in the sour cream mixture.  Set aside.
  4. Warm the tortillas in the microwave on high for 20 seconds.
  5. In a 9×13 baking dish, ladle 1 cup of the green chile sauce {recipe below}
  6. Add 1/4 cup of the chicken mixture into the center of a tortilla and roll it up placing it seam side down in the baking dish. Continue this method with the rest of the tortillas and chicken mixture. Pour the remaining 2 cups of green chile sauce evenly over the top of the tortillas.  Top with Monterey jack cheese {to taste – I used about 1 cup}.
  7. Bake for 20-25 minutes, until the cheese is melted & bubbly.
  8. Serve warm with extra green chile sauce on the side. 
  9. Optional: Garnish with avocado, onions, and/or cilantro

For the Green Chile Sauce:

  1. In a blender add 1 diced onion, 1 clove garlic, 8 oz. hatch green chiles, 1 lb. tomatillos chopped and 1 1/2 cups warm chicken stock.  Blend on a low speed, begin to puree the sauce, increasing the speed until smooth.

For this recipe you can also use any leftover meats, beans or vegetables as a filling to replace the chicken. It’s also a great recipe to make a week ahead of time and freeze. Allow to thaw and come to room temperature before topping with cheese and baking off. Or make the day before and refrigerate before topping with cheese and baking off.

I made this recipe with the help with the help of some tasty & delicious Veetee rice! The folks at Veetee contacted me a while back asking if I would like to try their product. Veetee rice is dry & microwaveable rice -> you literally pull the film back from the container, put in the microwave for 2 minutes and fluff with a fork and it’s good to go!

It’s so tasty & delicious -> not to mention it’s so quick and easy to make! Charles loves this product because it takes no time at all to add some tasty rice as a side dish for a meal. I love it because it is so yummy and Brooks enjoys some yummy rice with some of his meals – and did I mention this takes 2 minutes to make?
