Pickled Onion, Avocado & Corn Salad with FreshDirect

First up I NEED to share with you my latest salad/salsa creation. I made this the other day with short rib tacos AND for a taco night when we were in Naples and both times it was a big hit. Not sure if this is better called a salad or a salsa because I’ve eaten it alone and topped on a taco, but we are going with salad for now! A corn salad is all sorts of awesome no matter what season – but it’s sort of extra awesome in warm weather, or when you are just wishing you are in warm weather!

Here’s how I made it ->

Pickled Onion, Avocado & Corn Salad

What You Need:

  • 1 red onion, diced
  • ⅔ c. apple cider vinegar
  • 1 can sweet corn, drained
  • 2 avocados, peeled, pitted and diced
  • 1/2 red pepper, diced
  • juice of 2 limes
  • handful of grape tomatoes, sliced
How To:
  1. Mix together the red onion & vinegar in a bowl. Allow to sit for 20 minutes.
  2. In a separate bowl, mix together the drained corn, avocado, red pepper, lime juice and grape tomatoes.
  3. Drain the onions, but reserve a couple tablespoons of the pickling juice. Toss the quick pickled onions and reserved juice with the corn and avocado mixture.
  4. Serve & Enjoy!

Seriously, go make this now! The pickled onions make this dish amazing and you can totally add any other veggies you like!

I made this lovely meal after a grocery delivery from FreshDirect!

The folks at FreshDirect contacted me a few weeks back asking me if I would be willing to try out their service for a review on the blog. I had been seeing ads for FreshDirect all over and I’d been seriously interested in trying out a grocery service myself, since food shopping with a little should be an olympic event!

Living in the city I know tons of people who use FreshDirect. Where we live, and just in the city in general our main market options include Whole Foods – which is pricey, or Trader Joes – which is awesome, but doesn’t always have a lot of what I am looking for.

So when I had the opportunity to try FreshDirect myself, I knew the perfect time to do it -> when I came back from vacation in Naples! I placed this order on Monday afternoon & when I came home on Wednesday, in the 2 hour window I had previously selected {5pm-7pm} I had two boxes full of groceries show up at my door. And it was pretty much perfect timing since you know when you come back from a trip there is nothing to eat in the house ever!

In this order, I wanted to try a little bit of everything to try out as much of the FreshDirect product as I could. Here’s what I ordered:

  • Stonyfield Yobaby Yogurt- 6 pack , organic
  • Mountainside Farms 2% Milk
  • Tuscan Dairy Farms Whole Milk
  • 2 Haas Avocados
  • 2.20 lbs Beef Short Ribs
  • Local Harvest Lean Ground Beef
  • Whole Corn Kernels
  • FreshDirect Spicy Kung Pao Chicken Stir Fry Kit {raised w/o antibiotics}
  • Bunch of Arugula
  • 2 packs Grape Tomtoes
  • 2 Green Cucumbers
  • 2 Bunches Green Kale
  • 16 oz. Brussels Sprouts
  • 1 Red Bell Pepper

The one thing that was awesome about this was, as I had previously mentioned, coming home to a somewhat stocked fridge without having to go anywhere. The rough part about it all was not really having a grocery list or plan – because, hey! I was still on vacation & had no idea what was still in the house! So it was sort of a random list of food but things that I knew we ate regularly and things that seemed to be a pretty good deal.

This whole grocery haul cost around $67 {I scored free shipping too using code RMNSHIPFREE}- which I didn’t think was too bad considering the short ribs were sort of pricey { they were $17 & we wanted to treat ourselves, this isn’t something I normally buy} and I got us the stir fry kit {$12} as something we could immediately make when we got home for dinner – this was more of a convenience thing & I wanted to try out the FreshDirect kits . And did I mention -> everything was delivered right to our door?

I wanted to get a bit of everything – dairy, meat, fruit, vegetables, prepped to cook and a little something for Brooks too. I thought that made the most sense to try everything out and I have been really pleased with the products. Everything has been fresh & tasty and delicious.

Here’s a little peak of how the Spicy Kung Pao Chicken Stir Fry kit turned out. Everything we needed, chicken included was all packed into a container and we just had to heat everything up & add the sauce. Not to mention it was super delicious!

FreshDirect offers a wide variety of prepped to cook meals and I totally want to try a few more out, because literally, it couldn’t have been easier & this meal brought the heat!

As a mom who lives in the city, grocery shopping isn’t always the easiest thing for me to get done, but it is also something I need to do on a regular basis. I totally plan on using the FreshDirect again soon – it was convenient, quick and everything was fresh & tasty!

    Yes, I would totally use a Food Service. We have several in our area and I would seriously use this service if I couldn’t get out for some reason. This sounds like the perfect solution for you living in the city and for convenience in the winter when it’s hard to get out with a little one! Your Fresh Direct products looked awesome!

    Love fresh direct they have great prices sometimes on fruit and veggies. Try their frozen pizzas they are great and very reasonably priced. I like the fresh direct branded stuff as well.

    I saw a presentation at my church group about a Boycott of Fresh Direct because they want millions of dollars in tax monies, they would pollute the South bronx where kids have asthma and take over a waterfront where the community wants parks a school and affordable housing. Look it up. I saw it made me feel bad personally to use them:-(
