Yesterday I was feeling inspired to whip up a special breakfast for my boys, so I decided to bust out one of my mom’s favorite go-to quiche creations. It was a big hit with my big & little man – eggs & bacon, baked to perfection, what’s not to love? – so today I thought it would be a nice start to your Sunday to share My Mom’s Impossible Bacon Quiche!
Sure, this recipe calls for a lot of bacon – but sometimes you just need a lot of bacon! And trust me, when I tell you the bacon makes this dish! Yum! I also love the fact that you don’t need a pie crust and the Bisquick makes the quiche light, fluffy and delicious!
I also love the fact that this was something my little man was easily able to eat! For Brooks, eggs have been hit or miss, but he loved the consistency of the quiche, it was easy for him to pick it up and self feed and he seemed to really love the flavor! This is a quick and easy dish I will be recreating with lots of different protein and vegetable varieties!
