Asparagus + Arugula Pasta Salad

This weekend I was inspired by a recipe I saw on Gimme Some Oven that I had to recreate it myself to share on the blog! This Asparagus + Arugula pasta salad is the perfect recipe creation for any spring or summer day. It’s light, full of flavor and the red wine vinegar {which is optional to use} give it a little kick.

I personally am a big pasta salad lover because the possibilities for what you can create with it are literally endless. You can add anything and for me, the pasta fills me up and leaves me satisfied while also sneaking in those yummy fruits and veggies too! I’m currently craving a pasta salad with grapefruit {random? pregnancy problems!} – anyone have any good recipes? Please share!

Ok, back to THIS salad -> I love this recipe because arugula + grape tomatoes + feta cheese make me all sorts of happy. Add in some lemon juice, red wine vinegar a little pepper and some pasta and you are good to go. That’s why this recipe is tasty, super quick to make, and delicious! How To:

Cut 1 lb. fresh asparagus {ends trimmed} into bite-sized pieces & set aside.

In a large stockpot filled with salted water, cook  1 lb. whole wheat pasta al dente according to package instructions.  Right before the pasta is done, add in the asparagus with the pasta.  Once the pasta reaches al dente, strain the pasta and asparagus then rinse with cold water until cooled.

Return pasta to the pot and toss with 3 tbsp. lemon juice and 1-2 tbsp. zest along with 1 tbsp. olive oil and 1 tbsp. red wine vinegar until combined.  Add in 2 handfuls of baby arugula, 2/3 cup sliced grape tomatoes, 2/3 cup crumbled feta cheese and a few pinches of fresh pepper – toss until combined.  Taste & add additional black pepper, if needed.

Serve immediately, or cover and refrigerate for up to 3 days.
