I feel like the one thing I have been really slacking on these days has been cooking. With this summer heat + my last few weeks of pregnancy #2, plus chasing around after my 1.5 year old little one, there isn’t much time to try out new recipes. I also blame the fact that my heartburn this pregnancy has been insane. So much so that most nights I don’t even want dinner, I just have a little cereal and call it a night.

Anyone else get crazy pregnancy heartburn? I had it with Brooks too, it’s the worst!

BUT I was excited and inspired to get out of my non-cooking rut when I had the chance to partner with Food Lion and check out their new MVP site and try out a recipe to be included in their new recipe lineup! I’m even motivated now to possible get a few freezer meals prepared for post baby!

Side Note: Anyone have any good freezer meal suggestions? Please send them my way!

When I tried out this chicken + cheddar stuffed potatoes dish I had two goals: get Brooks to try some new flavors {which were essentially the herbs} + make a new dish for Charles & I to enjoy as well. Sometimes its hard to combine the two and make something baby friendly {which I try not to cater to too much} and something we enjoy as well. I like Brooks to eat what we eat for the most part – Hello Baby Led Weaning! Luckily potatoes + chicken are at the top of Brooks’ little food chain at the moment, so I had a hunch this would be a hit!

Add in a little corn on the cob & use a melon baller to scoop out the potato for some extra fun texture and you are good to go!

Ha!} + you should totally submit your favorite creation. I love to look around and stalk recipe sites {especially during nap time!} It’s fun to share the cooking inspiration love!

And did I mention I’m in the market for some good freezer meals?!

That’s what I really enjoyed about Food Lion’s new MVP site – all the eats! BUT it’s an awesome place to check out their weekly specials, coupons and even different events happening at your local store too! It’s sort of a one stop shop!

    One of the best parts about finally having my baby on the outside was NO MORE HEARTBURN. Oh glorious, glorious day! Heartburn could possibly be the yuckiest pregnancy symptom ever, especially when you’ve had it BAD! I feel ya sister.
