Old Roommates Holiday Dinner Party

Ok, I admit it. I had to cheat a little bit from my Only The Essentials Challenge for tonight’s festivities. I promise it was only a teeny tiny bit! I had been planning to host a dinner party for my old roommates and their menfolk before I had committed to my challenge, but I made it work out quite nicely. I managed to host a dinner party for 6 people and I only had to buy about $10 worth of goods at the grocery store! Everything else I had in my pantry/fridge! Woohoo! Here’s what I got at the store – broth, split peas, celery, garlic, onion, asparagus and sweet potatoes.

The star of my dinner show was sponsored by Just Bare Chicken, who had recently sent me two whole chickens (along with some other goodies) to test out! The chickens were 4-6 pounds each, and I didn’t think 1 would be enough so I made both and figured I would save the rest for leftovers. It was nice to be able to have friends over to enjoy the chicken with me!

Just Bare Chicken is  made without antibiotics, no added hormones, are cage free, vegetable fed and are also each traceable to the family farm where they came from. They are also packaged in a clear plastic recyclable  tray.  How cool is all that? I love it!

The chicken I just threw in the oven for about an hour and a have and I let it bake. While that was cooking I worked on another star of my dinner show. It involved carrots, celery, onions and garlic. Any guesses on what it is?

I also added some Applegate Farms Andouille chicken/turkey sausage that I had in my freezer to my creation.

Split Pea Soup! Woohoo! I was inspired by this post the other day and decided I had a good amount of the ingredients to make it myself. I have never made homemade split pea soup before, so this was really exciting. Do you think its random to pair soup with chicken? Typing this now I feel like it may have been random, but I really enjoyed it, and I think everyone else did too. It turned out to be more of an appetizer to the dinner. Yum!

While my chicken and soup were cooking away, I cleaned up the apartment and attempted to make it as Christmas-y as possible!

I felt quite domestic and mature tonight, hosting a dinner party. I am growing up fast!

When the guests got here we started off with some peppermint martinis (more on that later!) Kate and Noodles look so cute in this picture, I love it!

Love you old roommates! Kate and Jill! Remember when the three of us went to see Britney Spears (recaps here, here and here)? That seems like FOREVER AGO! I have missed you girls!

While the girls chatted drank, the boys were in charge of carving the turkeys. AJ and Fiancé each got their own turkey to carve!

Check out my Split Pea Soup- It turned out AMAZING! The recipe can be found here. I made a few minor adjustments but it was super easy to make and tastes fabulous! I am so excited we have leftovers. I can’t wait to have some of that for lunch tomorrow! I served the soup with some toast bits which were great dippers!

The main course included lots and lots of chicken, mashed potatoes and some asparagus. It turned out to be the perfect amount of food for everyone! I love it when it works out like that!

I believe everyone enjoyed their dinner! It was great that we were all able to take some time out of our crazy holiday schedules and hang out! Thanks everyone for coming over!
