Brussels Sprouts Leaf Salad

This Just In! I have a new favorite way to enjoy brussels sprouts!

Some of you may know, that the brussels sprouts are one of my all time favorite vegetables. I make them a very specific, tried & true way over & over again and I love them – Balsamic Brussels Sprouts – have been a go-to dish of mine for the past few years. But now there is a new brussels sprouts dish in town!

The Brussels Sprouts Leaf Salad a la Pamela Salzman to be exact.


I saw this dish the other day & immediately bookmarked it to make for myself. I am obsessed with the fact that I now have a new favorite way to enjoy one of my favorite greens!



To Make the Dressing: 

In a small bowl, whisk together 1 tablespoon finely chopped shallot, 1 teaspoon lemon zest and 2 tablespoons lemon juice, 1 tablespoon raw honey, 1 teaspoon Dijon mustard, 1 teaspoon sea salt and pepper.  Continue whisking while slowly drizzling in the 1/2 up olive oil

To Make the Salad:

In a large pot of salted  boiling water, blanch 2 lbs of washed/cored/leaves separated brussels sprouts (discard the core) until they are a vibrant green (less than 2 min).  Drain and immediately submerge the leaves in ice water to stop the cooking.  Drain and dry well.

In a large serving bowl, toss the Brussels sprout leaves, 6 tablespoons dried cherries, 6 tablespoons almonds and vinaigrette to lightly moisten the salad.  Serve & Enjoy!



Enjoy this salad at any family gathering & it is sure to steal the show!
