One Pot Cheeseburger Casserole

In an effort to keep up with my 30 before 30 goals, {specifically #2} I am pumped to share more of my recipes with you on the blog. I know my posts used to be very food focused so it will be nice to bring more of that back into the blog posting schedule. I already have a few different recipes lined up to share with you over the next few weeks.

So today I wanted to share with you a very tasty recipe I found online the other day & decided to re-create. A cheeseburger inspired casserole dish? Oh I am so in! This recipe serves 8 people {at least} and makes a massive pot of casserole. Charles & I had it for leftovers over the course of a few days and it re-heated very well & was super tasty.

So without further ado – > One-Pot Cheeseburger Casserole 
One-Pot Cheeseburger Casserole

1. It all starts with a large pot. Add a drizzle of olive oil and sauté 1 small, diced yellow onion until soft

2. Brown 1 lb. ground turkey over onions & remove excess fat. Season with S&P

3. Add in 1 can petite diced tomatoes, drained

4. Also add 8 oz. tomato sauce, 2 cups vegetable broth, 2 cups H20

5. Mix in a few squirts of ketchup & 2 tsp. dijon mustard

6. Finally add in 1 lb. pasta  – I used Fusilli, since it’s what I had, but any will do. {A whole wheat option would be tasty as well!}. Bring everything to a boil then reduce heat, cover & let simmer for 20 minutes, or until pasta is cooked.

Once the pasta is cooked remove the pot from the heat and stir in 1 cup of low – fat shredded cheddar cheese. Re-cover the pot and let the cheese melt into the casserole.

Add your cheeseburger toppings of choice – Serve & Enjoy!

We decided to top our casserole with freshly diced tomatoes, green onions & pickles {yum!} – These extra toppings really give the casserole the fresh, crisp taste.

I love a tasty meal that can be easily made in one-pot. Less mess & less clean-up is always a win in my book. I also love how you can literally do anything with this dish. You can add in any extra veggies, toppings or even switch out the meat option to your taste. It was so easy to make and the flavor was spot on – a perfect summer dish for sure!

    You just put pickles in a casserole. Genius! Pickles on cheeseburger pizza is one of my favorites. I’m not sure why I didn’t think of this before. Thank you! I look forward to more of your recipes popping up on the blog!
