Crunchy Onion Chicken

Ever since being pregnant I have been anti-chicken. Can’t really put a finger on why but it seriously grossed me out the past 9+ months. I was told my cravings and aversions would change after the baby came, and while that has been true for most things, it hasn’t been the case in terms of chicken.

Except for this recipe.

Crunchy Onion Chicken Recipe

When my mom came to stay with us after Brooks was born, she made us all sorts of tasty meals. She mentioned this onion chicken recipe that her and my dad love. I was on the fence about trying it because chicken still sort of made me gag, but I knew Charles would like it so I said I would give it a try.

And oh man, I am so glad I did!

This really the only chicken dish I’ve had in a looooong time – and I can’t get enough of it! My mom has made it for me a few times and last night I posted a picture of it on Instagram & got some recipe requests so I thought it would be fun to share that on the blog today. I think the part that I love the most about it is that my mom cuts the chicken SUPER thin, but that’s just me.

This recipe takes about 5 minutes to prepare, cooks for 20 minutes and makes 4 servings – Here’s how you make it:

  1. Crush 2 cups fried onions with 2 tbsp. flour in a plastic bag.
  2. Dip 4 boneless, skinless chicken breasts in 1 egg {that has been beaten} and then coat it in the onion crumbs.
  3. Bake at 400* for 20 minutes

It’s as easy as 1,2,3 and OMG this chicken packs a serious punch. It’s always so moist and full of flavor, I can’t get enough, and it can’t get any easier to make. My mom always serves it with potatoes au gratin & fresh green beans. Yum!

    If I am going for simple, pouring soup mix on chicken (cream of broccoli is great) and baking.

    I am 29 weeks pregnant and I did have a first trimester filled with pukey days. The only two food aversions I have had and still have are oatmeal and apples. I think I know why. I have been eating both of those things daily for 10-15 years. I think my body just said enough!!
